Grapefruit and Raspberry Popsicles
The people who know me well, can tell you that I'm crazy about raspberries, and I usually eat half a grapefruit every morning. And although I love the bitter and sour grapefruits, I eat a lot more of them when they are just a tiny bit sweeter, like they are right now. And with super plump and sweet raspberries, I couldn't be much happier with my breakfast than I am these days. Making popsicles to fight off my post vacation sugar cravings is also on my to-do list every Sunday, so I'll have a fresh batch of sweet, yet healthy treats to turn to when the cravings kick in.
To make a batch of 6 popsicles you'll need
1,5-2 grapefruits, depending on size
12 fresh raspberries
This recipe really couldn't be more simple. Rinse the raspberries under cold, running water and place them in the popsicle moulds. Juice the grapefruits and pour it over the raspberries. Fill the moulds as full as possible, and place them in the freezer. After about an hour you can take them out of the freezer and put one popsicle stick in each mould before giving them a good 5-6 hours in the freezer. I usually make them in the evening, to have a batch ready for the week and keep them in the freezer over night.
When the popsicles are ready, you can get them to let go of the mould by running hot water on the back of the moulds, or just pop them out by hand if you are using silicon moulds. Keep them in a plastic bag in the freezer and enjoy one whenever you are in need of a sweet, fresh treat. And if you care about calories, I can tell you that each of these are less than 30, so you basically have as many as you want!
These days I'm trying really hard to get back into my daily routines after my summer vacation, and cutting back on my sugar intake is a huge part of that. Vacation means more alcohol, sugar & late nights, and to be able to get back to good work routines and making up at 7 every day, I need to cut back. I'm having the worst sugar cravings imaginable, and I have been experimenting with recipes to keep me away from buying candy during the week. These little popsicles are one of my favourite solutions. There is absolutely no added sugar, but because the raspberries are so sweet, I still get to satisfy my sugar cravings after dinner. They are super fresh and fruity and I love them! I make a batch of popsicles on Sundays so I know that I'll have something to turn to when my body is craving sugar.
