Irresistibly Fresh and Delicious Mojitos
Summer is cocktail time, and even though many of us are back at work already that doesn't mean that we don't get to indulge in delicious, fresh cocktails. All the more reason to look forward to cool down with a drink on hot weekend evenings, followed by lazy mornings in bed. One of my favourite cocktails is the mojito, so when John suggested we make them I has quick to agree. I'm absolutely nuts about everything citrus, so anything that involves juicing gorgeous green limes would have me jumping of joy, and throwing fresh mint leaves and a little white rum into the mix doesn't really lower my enthusiasm. The past few weeks have been a bit crazy with work, and i'm far behind on plenty of deadlines, so this week I'm working extra hard to get back on track before taking a few days off. I can't wait to have a long weekend filled with wonderful people, cocktails, late night dancing, delicious meals and ocean swimming. Salt water and sunshine will do me good, I'm sure.
To Make Two Mojitos You'll Need
Leaves from 2 strands of mint
1 small lime
4 tablespoons simple syrup
2cl white rum
Plenty of ice
Start by smashing a small handful of ice cubes with the mint. Either with a cocktail grinder, or like we did: with a plastic bag and a rolling pin. Divide between the two glasses, juice the lime and add it along with the sugar syrup. Top it off with the carbonated water and decorate with a slice of lime and a little hint of mint. It is a really good idea to roll the lime before cutting it to prepare for squeezing the juice out of it. It makes it a lot easier to get out all of the delicious lime juice from the fruit. Works every time!
John and I are far from done with our cocktail project, and I'm super exited to enter the autumn and winter section of our collaboration and give you recipes for the seasons ahead. The mojito is the fifth cocktail we have done together, and they have all had kind of a light, fresh kind of feel to them.
